While trying to be healthy I’m also try ing to eat breakfast more often. After all, it’s supposed to be the most important meal of the day.
I recently read an article that made for some interesting thinking that sumo wrestlers actually skipped breakfast. I rarely have time to make myself a full english. And I’ll never turn down sunrise at Duck & Waffle. but when I have a bit more time than to have my vegan protein shake with almond milk, I try to make sure I get some good proteins and healthy fats into my diet first thing.
With that in mind here are a few of my more healthy favourites.
Scrambled egg on toast
Simple, quick and easy. No milk. Just two eggs. Preferably on something seeded.
Avocado on Sourdough
I make a super quick guacamole with just some lime, olive oil, salt, pepper & a few chilli flakes. Mash it together and top a slice of fresh sourdough from my local bakery. If I’m going all out (and make it more instagram-able) I’ll add some goats curd and a few slices of tomato. Nom!
Neal’s Yard Dairy do some amazing Oat pancakes that keep for a good week once open. You can heat them up on a pan without any oil or in the microwave and then fill as desired. In the morning I’m more of a savoury person so I I usually filled them with some sauteed mushrooms and spinach. On occasion the added bit of grated cheddar is a welcome addition.
About two months ago I bought a Nutri Bullet and it’s definitely meant I can have more filling breakfasts even when I’m rushing. I’ll always add a pear and some frozen berries or blueberries. I then have a collection of extra healthy additions including: Chia seed, bee pollen, matcha powder (with extra ginko and goji berries) and chlorella powder. To make it an extra special treat I’ll add a teaspoon of raw brazil nut cocoa spread or a couple of dates before topping it with almond or oat milk. Healthy and tasty.
